OK, so this IS a little domestic, but for future reference, this was rather nice:
Herrings with Shallots and Lemon with Mustard Mash
(or another Nom recipe cobbled together from what happened to be in the fridge)
What one needs:
2 herring cutlets (75p)
plain flour, liberally seasoned with dill and sea salt (some on a plate, practically free)
1 lemon (20p)
about 6-7 shallots (35p)
butter (quite a lot, about 25p's worth)
organic potatoes (enough for mash for 2 people, 30p)
splash of milk
1tsp wholegrain mustard
about 25mins
What one does with it:
Peel tatties, chop into small bits and put in pan of salted water to simmer.
Wash herrings in cold water, shake off excess and cover in seasoned flour by pressing onto the flour plate (be vigorous).
Finely chop shallots and add to a pan with a great dollop of butter and the juice of half a lemon (be profligate). Soften shallots til pale golden brown over a low heat.
Melt butter in frying pan, add the herrings and the rest of the lemon, sliced. Cook on a fairly high heat (make it crispy dammit).
Drain cooked potatoes, mash with MORE butter, splash of milk and mustard (be brutal)
Dish up herrings, pile lemon slices and shallots on top. Hell, bury the fish in the mash if you wanna.
et voila, dinner for 2 for under £2
